I’ve been on the quest to find the perfect vegan brownie recipe for some time now. After a lot of trial and error, I realized that I simply couldn’t achieve the right texture without a proper egg substitute. The aquafaba makes a world of difference!
BEAT in small bowl until glossy and thick
1/2 cup aquafaba
1 cup sugar, added in tablespoons after mixture is foamy.
SIFT in medium bowl
1 1/2 cups flour
1/3 cup cocoa
1/2 tsp salt
MELT
2/3 cup dark chocolate
80g plant butter
STIR into chocolate mixture
Aquafaba + sugar mixture
1 tsp vanilla
FOLD
Wet mix into dry mix, stopping when it’s all just mixed. Stir in
1/2 cup chocolate chips
BAKE at 350 F for 20- 25 mins, checking at the 20th minute mark if toothpick comes out with sticky crumbs attached. Cool completely and then cut into pieces.
