Sometimes I am so overwhelmed with the cleaning that comes afterwards, that I end up later turning to methods that require fewer utensils. That’s the really cool thing about the brownies here – you use just a bowl, the beaters and a couple of spoons.

MELT

2/3 Dairy-free dark chocolate chips

in a glass bowl, scattering the chips in a layer and microwaving at short 25-second bursts until chocolate is melted.

WHISK

1/3 cup plant-based butter

3/4 cup sugar

2 free-range eggs

1 teaspoon vanilla essence

into the mixture, one after another. Keep whisking for another minute after ingredients are combined.

SIFT

2/3 cup flour

2 tablespoons cocoa powder

½ teaspoon salt

into the mixture, stirring afterwards until JUST combined. You can stir in ½ cup dark chocolate morsels at this point if you wish. Pour batter into 8”square prepared pan. You can grease and flour it the usual way but I dust mine with cocoa to keep the white shade of flour off my brownies.

BAKE at 180 C/350 F for 20 minutes and then check to see if done. Skewer/toothpick should come out sticky.
