To make orange cupcakes, you will need only one bowl. They’re easy to make, light and gluten-free too. I never put dairy in my desserts but this recipe has eggs. Boiled oranges might be a new experience for you but it’s nothing short I like my orange cupcakes with Swiss Meringue Buttercream but you can have them frosting-free!

LINE 

8 cups in a muffin pan

BOIL

2 oranges, rinse with cold water and repeat 3 times.

PEEL off the skin.

BLEND

Prepared oranges

1/3 cup sugar

2 eggs

1 ½ cups almond meal, sifted

1 teaspoon baking powder

POUR into liners.

BAKE at 150 C for 20 to 25 minutes, checking after the 15-minute mark with a skewer/toothpick. If it comes out slightly sticky and mostly clean, remove pan from oven. Poke holes in the cupcakes.

POUR orange syrup over cupcakes while they are warm. Decorate with orange slices.

Orange Syrup

SIMMER

Juice of one orange

¼ cup sugar

¼ cup water for 7-10 minutes, until slightly thickened.
