These cookies require very few ingredients and only an hour of your day. They are the perfect go-to for any occasion where you want your dessert to look gorgeous!
Cookies
COMBINE in a medium bowl
2 1/3 cup flour
1/2 cup almond flour
1/3 cup sugar
ADD to dry mixture
150g vegan butter
1/2 teaspoon oatmilk (or any plant milk) mixed with 1 teaspoon vanilla essence
Form dough into a ball and refrigerate for a minimum of 30 minutes (upto 2 days!) Roll out dough on a floured surface with a floured rolling pin until 1/4 inch thick. Cut out cookies and place on silicone baking mat, making sure there is some gap between each cookie.
BAKE
at 350 F or 180 C for 10 minutes, checking for slight browning when cookies begin to give off aroma. Remove from oven and cool completely.
Raspberry Jam
HEAT in a small saucepan
1 1/2 cups raspberries
3/4 cup sugar
1 tablespoon lemon juice
Crush the raspberries when hot. Keep stirring until thick, for 10 minutes. Cool jam and sandwich cookies with it.
